Egg Roll in a Bowl
Quick dinners that don’t dirty up too many dishes, are packed with flavor and nutrients, and are family favorites are on frequent rotation in our home. One of those is Egg Roll in a Bowl. I make it at least once a month and usually double the recipe below so we have enough for leftovers.
Egg Roll in a Bowl
Ingredients
2 Tbsp. avocado oil
1/2 large yellow onion, chopped
6 green onions, sliced
4 garlic cloves, chopped
1 inch fresh ginger, peeled and chopped
1 pound ground pork
1/2 head cabbage
3 large carrots
2 cups bean sprouts
1/4 cup coconut aminos
1 Tbsp. sriracha sauce (Look for one without added chemicals. I use Sky Valley and Lee Kum Kee brands. They both have xanthan gum in them, which I don't love, but they are the best I can find outside of making it myself.)
1 Tbsp fresh Thai basil, chopped (optional)
Sesame seeds
Toasted sesame oil
In a food processor equipped with the grating disc, shred the cabbage and carrots.
Heat the oil in a pan over medium heat. Add the onions, garlic and ginger and cook until soft and fragrant.
Add the pork and cook for 7-10 minutes, or until cooked through.
Add the cabbage, carrots, sprouts, sriracha sauce, and coconut aminos. Cook for an additional 5 minutes, until the vegetables are softened.
Remove from heat. Stir in Thai basil, sprinkle with sesame seeds, and drizzle with toasted sesame oil before serving.
Mix it up! Here are some variations that you could try:
Add chopped mushrooms or shredded daikon radish.
Vary the type of cabbage (green, purple, Napa, or Savoy) you use or combine two different varieties. You could also use a pre-packaged coleslaw mix instead of shredding cabbage and carrots yourself.
Sometimes bean sprouts can sometimes be difficult to find. When that’s the case, try sunflower sprouts or other sprouts that are in stock in your local store. They can also be omitted completely.
Change up your protein, using ground chicken, turkey, or beef. If you're doubling the recipe, you could try 1 lb. ground pork mixed with 1 lb. ground beef.
Add in other herbs and spices such as red pepper flakes, coriander seeds, fresh mint, or cilantro for added zing.
